From One Food Truck to Four Restaurants: How Señor Sisig Scaled with Toast

Bay Area, CA

Sixteen years ago, Evan Kidera started Señor Sisig as a single food truck in San Francisco, folding Filipino flavors into a Mexican-inspired menu. The idea took off, and over time it grew into something broader: a Filipino fusion concept built on bold, creative flavor combinations. At its peak, Señor Sisig ran seven trucks across the city and today has grown into four full restaurants.
For the last five years, Toast has been part of that growth – running the front counter, kitchen, and back-office reporting for a business that now spans food trucks and quick service restaurants.

Switching From a System Built for a Different Business
Prior to Toast, Señor Sisig used a payment system for nearly a decade in its food trucks. As their vision evolved, so did their system requirements.
Señor Sisig was outgrowing what once worked, and needed a new POS that could:
Run in both the food truck and restaurant
Provide the depth of reporting required to operate a restaurant
Offer a user-friendly experience for both guests and staff
“We switched over to Toast five years ago to support the back end of our restaurant and quickly realized it was flexible enough to use in our food trucks as well, so it was a seamless transition."

One POS System for Every Format
Over the last five years, Toast has provided Señor Sisig a robust toolset that has enabled their business to grow, including:
Real-time access to sales data and reporting, so that the team can make informed decisions.
Easy integration with other core systems, such as Señor Sisig’s accounting software.
Greater operational efficiency through intuitive interfaces for both employees and customers.
“Toast has really helped us simplify. The POS is something that people are familiar with. We’ve also implemented Toast Kiosks in all of our locations, and it’s very user-friendly. On the back end, it’s very easy for our employees to use as well, so it takes very little training because it’s very intuitive for an employee to use."

For a business built on providing fast and high-quality service, any time saved on training is time that can be spent serving guests. A system employees can pick up quickly, paired with a front end guests already know, can help keep that turnover from becoming a bottleneck.
For Evan, it’s the strong foundation that matters most: "My favorite Toast product is the core of what Toast is – a POS system. I'm a believer that if you don't have that, then everything else doesn't matter.”
Turning Data into Decisions with Toast IQ
While success starts with the POS foundation, Evan is still always looking to stay ahead of the curve. “As the industry grows and technology changes, we want to be partnered with a POS system that has the same foresight as we do,” says Evan.
Part of that includes leaning on Toast IQ – Toast’s native AI assistant – to make day-to-day operations easier.
“My team uses Toast IQ all the time. Instead of digging through data on their own, they’re able to go to Toast IQ and pull reports or ask it to run an analysis on our sales projections or how we’re performing. It’s a fun tool to experiment with and it’s continuing to grow and get better."

That shift from manually pulling reports to simply asking a question is the kind of time saver that adds up across a growing operation.
Keeping Speed & Service at the Forefront
Across five years, multiple locations, and different formats, Señor Sisig is ready for whatever comes next.
“The biggest impact Toast has had on our business is increased efficiency. It has streamlined our operations and made it easier to serve customers consistently and effectively. Also, the insights and reporting have given us better visibility into our business. Having access to accurate data and performance helps us make more informed decisions, identify opportunities for improvement, and operate with greater confidence,” says Evan.
As they’ve grown, their team has used:
Toast POS as the user-friendly and unified system across their food trucks and restaurants
Toast Kiosks to offer self-service ordering at every location
Toast IQ to more quickly pull reports and run projections
With the right technology foundation, the team at Señor Sisig has more time to invest in what matters most: fostering culture, creativity, and connection in their community.
“It really comes down to having a system that we can use without any headaches so that we can focus on what we do well – making food and providing great customer experiences. I think that is what any restaurant wants – to partner with a product that helps them do what they do best – and that is what Toast does for us,” says Evan.
FAQs
Can businesses use Toast POS for both food trucks and restaurants? Yes, and customers like Señor Sisig use Toast across both formats, allowing the business to manage reporting and operations consistently.
Why did Señor Sisig switch to Toast? Señor Sisig's original payment system worked for a food truck business, but couldn't provide the flexibility and back-end reporting needed once the company opened its first restaurant. Toast offered both, plus the ability to run food trucks and restaurants on one system.
What is Toast IQ used for? Toast IQ lets operators ask questions about their sales data directly, instead of manually pulling reports. Señor Sisig's team uses it to run sales projections and analyze performance across locations.
How long does it take to train new staff on Toast? Señor Sisig's owner describes Toast's back end as intuitive enough that it takes very little training time to get new employees up to speed.
